When we talk about creating an unparalleled learning environment, we don't necessarily mean under our own roof. By the time students graduate, they will have completed 480 hours of industry experience. Because the best way to learn how the industry works is to work in the industry.
The Internship
The purpose of the internship is to provide experience for students to practice the skills developed throughout the program while still attending classes on campus. The internship is to be completed before the student can enter into their final externship and is accomplished during one 10-week term at The Chef's Academy. The required 120 hours of work experience is to be completed in conjunction with weekly journals of hours recorded and tasks learned on the job. A final summary and evaluation is due for a final grade. It's a great way to build upon existing skills while still attending classes and learning new ones.
The Externship
All programs at The Chef's Academy culminate in an externship. These provide an outstanding opportunity to get real-world, hands-on experience in the field, as well as establish a network of connections that can lead to a permanent position after you graduate.
The purpose of the externship is to build upon industry experience by requiring the students to fulfill more hours per week prior to graduation. The last term before graduation is devoted entirely to the required 360 hours of work to be earned outside of school over a 10-week period. Expectations revolve around promptness, responsibility, quality and dedication to the externship site by the students. Weekly journals of time worked and tasks learned are required to be filled out by students as well. At the end of the 10 weeks, an evaluation by the employer/supervisor is needed to finalize the externship. It's an invaluable chance to learn from the people who will be your peers and supervisors after you graduate.
